  • 30 courgette flowers
  • 4 grinded courgettes
  • 1 grinded carrot
  • 4-5 chopped onions
  • 3 tablespoons spearmint
  • 3 tablespoons dill
  • 150 ml Olive Oil
  • 1 cup parboiled rice
  • 2.5 cups vegetable broth
  • lemon juice from a lemon
  • salt,pepper

Directions :

  1. wash gently the courgette flowers
  2. in a large pan heat up 70ml olive oil and simmer the chopped onion,the grind carrots and courgettes for 4-5 min
  3. add the rise and cook in medium heat for 4 min
  4. add salt,pepper,dill and spearmint
  5. trasfer the mixture into a bowl
  6. using a large spoon fill the half courgette flowers and then roll the ends
  7. put them in a large pot tightly together
  8. add the vegetable broth and the rest of the olive oil and cook them with a plate on top in high heat.
  9. let it boil for a few minutes and them low the heat to medium and cook it for 20 minutes
  10. Add the lemon juice
